Each course is prepared by our own Executive Chef Ed Miller, CEC, and his team of culinary professionals to dazzle your senses and delight your palate.

Doors open at 6 p.m. | Dinner begins at 6:30 p.m.

First Course

Pan-seared Sea Scallops on a Confit of Shitake Mushrooms
topped with crisp Pancetta Crumble and laced with Lemon oil.

Paired with Starborough (New Zealand, Sauvignon Blanc).

 

Second Course

Prosciutto & Cucumber wrapped in a Gourmet Greens Bundle
with Cherry Rainbow Tomatoes drizzled with a Balsamic reduction.

Paired with Kendall Jackson Vintner's Reserve (California, Chardonnay).

 

Third Course

Pink Champagne Sorbet

 

Fourth Course

Sliced Medallions of Roasted Tenderloin of Beef
with a Red Wine Demi-Glace, accompanied with

Smoked Salmon-wrapped Tiger Shrimp
served with Gratin of Mashed Yukon Gold Potato with White Truffle oil and Chef's seasonal vegetables.

Paired with Dreaming Tree Crush Red Blend (California, Meritage).

Fifth Course

Belgium Chocolate Creme Brulee
with fresh Strawberries on Raspberry Puree with a splash of Triple Sec.

Paired with Bogle (California, Zinfandel).
